Yam Gratinée

One very tasty dish that captures the flavours of fall!

Ingredients

  • 2 lb Very Coarsely Shredded Yams
  • 1 ½ cups Cereal (10%) Cream
  • 1 cup Orange Juice
  • ½ cup Demerara Sugar
  • to taste Salt and Pepper
  • Grated Orange Zest of 1 orange
  • 1 tsp Fresh Chopped Ginger
  • 1 tsp Coriander
  • ½ cup Melted Unsalted Butter
  • 2 cups Fine Dry Breadcrumbs
  • ½ cup Grated Parmesan Cheese

Instructions

  1. Pre-heat oven to 350 F.

  2. Place yams in a large buttered casserole dish.

  3. In a saucepan, mix remaining ingredients except butter, breadcrumbs and Parmesan cheese and bring to a boil and pour over yams.

  4. Bake uncovered for 30 minutes.

  5. In a small bowl, mix the melted butter with breadcrumbs and parmesan cheese.

  6. Spread over casserole and continue to bake for 30 minutes.

  7. If not brown, place under broiler until breadcrumbs are toasted brown.
