If you love truffle chocolates, you are going to love this easy recipe.
Either in the microwave or in a heavy pot on the stove, scald the cream, removing any skin that forms.
Add the butter and sugar and stir until dissolved.
Add the chocolate and vanilla and stir until the chocolate has melted.
Transfer to a stainless steel bowl, cover and chill.
Form balls by dragging a teaspoon across the mix and roll into a ball by hand.
Work fast and try to keep them chilled as much as possible.
Roll in chocolate vermicelli, dark or white chocolate fine shavings cocoa powder, icing sugar, toasted coconut, toasted chopped nuts.
Serve in small pastry cups.
Freeze until ready to serve or to give away as gifts.
Store them in the freezer in air tight containers until you are ready to eat and/or give them away!If storing in the refrigerator or freezer you may need to re-garnish with cocoa powder or icing sugar.
