Soft and scrumptious—you can make these cookies in 30 minutes!
Preheat oven to 375 F.
Using a bowl and wooden spoon or mixer, cream together butter and brown sugar.
Add egg and beat well, until mixture is lighter.
Add vanilla and pumpkin purée and mix well.
In a bowl, sift together dry ingredients and fold into creamed mixture.
Add chocolate chips or raisins if desired.
Cover baking sheets with parchment.
Measure out cookies by tablespoon and flatten with fingers.
Place cookies 1” apart.
Bake at 375 degrees for 12 minutes.
Cool on bake sheet before removing.
