Portuguese Tuna Fish and Black Eyed Bean Salad

This dish works well as a side or main salad, just serve with rustic breads, cheeses, sliced cucumber and tomato for a complete meal.

  • 3 cups Cooked Black Eyed Beans (or used canned, just rinse and drain)
  • 1 can Tuna, drained and flaked
  • ½ cup Finely Diced Onion (white, red or green onion)
  • ½ tbsp Crushed Garlic
  • ¼ to ⅓ cup Extra Virgin Olive Oil
  • 2–4 tbsp White Vinegar
  • 1 tsp Ground Coriander
  • to taste Sea Salt and Freshly Ground Pepper
  • to taste Fresh Lemon Juice


  1. In a bowl, mix all ingredients well.

  2. Adjust seasonings, oil , vinegar and lemon juice to taste.

  3. Refrigerate for a few hours if possible to allow flavours to mix well.
