This dish celebrates Hanukkah and is traditionally topped with a sprinkle of sugar or applesauce or sour cream. Change the toppings to goat cheese and smoked salmon and latkes into a new party favourite! Enjoy!
Mix shredded potatoes and onion with eggs.
Add salt and pepper.
Add ¼ cup flour and blend well (if mixture is too runny, add the remaining flour).
Heat oil (hot) and fry in 2 oz. portions until golden brown, drain and cool on paper towels.
Spread a thin layer of goat’s cheese on top of latke, top with a piece of smoked salmon and your choice of garnish!
