Mini Potato Latkes with Goat Cheese and Smoked Salmon

This dish celebrates Hanukkah and is traditionally topped with a sprinkle of sugar or applesauce or sour cream. Change the toppings to goat cheese and smoked salmon and latkes into a new party favourite! Enjoy!

Ingredients

Latkes:

  • 3 cups Finely Shredded Peeled Potatoes (russet if possible), drained well
  • ½ cup Finely Shredded Peeled Onion
  • 3 Large Eggs
  • ½ tsp Salt
  • tsp Pepper
  • ¼ to ½ cup All-Purpose Flour
  • ¼ to ½ cup Vegetable oil for frying

Toppings:

  • ¼ to ½ cup Goats Cheese (try Fairwinds Farm, available at Earth’s General Store and Planet Organic) or cream cheese
  • 4–6 oz. Wild Smoked Salmon (try Ocean Odyssey Inland or Planet Organic)
  • 2 tbsp Mini Lemon Wedges, Chopped Fresh Dill or Finely Chopped Chives for Garnish

Instructions

Latkes:

  1. Mix shredded potatoes and onion with eggs.

  2. Add salt and pepper.

  3. Add ¼ cup flour and blend well (if mixture is too runny, add the remaining flour).

  4. Heat oil (hot) and fry in 2 oz. portions until golden brown, drain and cool on paper towels.

Assemble:

  1. Spread a thin layer of goat’s cheese on top of latke, top with a piece of smoked salmon and your choice of garnish!
