Maple Roasted Root Vegetables

  • 2 tbsp Extra Virgin Olive Oil
  • ¼ cup Real Maple Syrup
  • to taste Sea Salt and Freshly Ground Pepper
  • 4 cups Combination of 1 ½” to 2” dice of your choice of de-seeded, peeled root vegetables (squash, parsnip, carrots, potatoes, kohlrabi, fennel)
  • ¼ cup Your Favourite Fresh Herbs (basil, rosemary, thyme or oregano)


  1. In a roasting pan, mix together oil, maple syrup and salt and pepper.

  2. Add root vegetables and fresh herbs and toss to coat.

  3. Roast at 375 for 30 to 45 minutes until lightly caramelized and cooked through.

  4. Stir regularly.

Recipe Notes

Treat yourself to real maple syrup or if you can find it Birch Syrup.

Birch syrup is harvested in the same manner as maple syrup, but 2 ½ times the raw birch syrup is required to make an equal amount of maple syrup.

Just google birch syrup in Alberta and producers will appear.
