Bannock with Sautéed Onions, Peppers and Garlic Sausage

A delicious one pot camping recipe - and it can also be made at home!

Ingredients

Bannock:

  • 3 cups All-Purpose Flour
  • 2 tbsp Baking Powder
  • 1 tbsp Sugar
  • 1 tsp Salt
  • ½ cup Unsalted Butter
  • 1 cup Water or Milk
  • 2 tbsp Vegetable Oil

Sautéed Onions, Peppers and Garlic Sausage:

  • 2 tbsp Olive Oil
  • 1 cup Thinly Sliced Onions
  • 2 cup Thinly Sliced Bell Peppers
  • to taste Salt and Freshly Ground Pepper
  • 2 cups ¼” Sliced Garlic Sausage

Instructions

Bannock:

  1. Mix together flour, baking powder, sugar and salt.

  2. Cut in butter finely (with a pastry cutter, knives or your fingers) until it resembles coarse oatmeal. Gradually add enough liquid to make a soft dough.

  3. Form a ball and then flatten into a circle about 1" thick.

  4. In a heavy frying pan, heat up 2 tbsp vegetable oil. Place in bannock dough and fry on medium low until lightly browned. (3 to 5 minutes).

  5. Turn and fry other side (3 to 5 minutes).

  6. Cut bannock into quarters and then cut to hinge each piece open and fill with sautéed onions, peppers and garlic sausage.

  7. Add your favourite condiments (mayonnaise, mustard, relish).

Sautéed Onions, Peppers and Garlic Sausage:

  1. In a frying pan, heat up olive oil and on medium heat, sauté onions and bell peppers, until soft and caramelized (about 5 minutes).

  2. Add garlic sausage and continue to sauté to heat through (about 2 minutes).

  3. Fill up bannock wedges and enjoy!
