Pear, Chili and Chicken Stir Fry

Ingredients

  • ¼ cup Water
  • 2 tbsp Soy Sauce
  • 2 tsp Cornstarch
  • 1 tsp Sambal Oelek (chili paste)
  • ½ tsp Freshly Ground Black Pepper
  • 1 tbsp Olive Oil
  • 1 lb. Skinless, Boneless Chicken Breasts, thinly sliced
  • 2 Garlic Cloves, minced
  • 2 Ripe Pears (medium firm), peeled, cored and sliced
  • 1 Bunch Green Onions, cut into 1 inch pieces

Instructions

  1. Combine water, soy sauce, cornstarch, sambal oelek, and pepper in a small bowl and set aside.

  2. Heat a wok or large frying pan over high heat.

  3. Add the oil and heat up.

  4. Add the chicken, garlic and stir-fry for 5 to 7 minutes or until chicken is tender.

  5. Add the soy sauce mixture, pears and green onions and stir-fry for about 3 minutes or until the pears are hot and softened.

  6. Serve with cooked pasta such as orzo, egg noodles or your favourite rice.

Recipe Notes

Make this recipe your own by using peeled and sliced apples or orange segments.

If using white or yellow cooking onions instead of the green onions, add to the hot oil when you are stir-frying the chicken and garlic.

Feel free to add shredded or finely diced carrot and celery to this recipe and get more of your daily requirement of vegetables.

Cashews, peanuts or almonds can also be added at the end!
