Summer Fruit Crêpes

Markets are ablaze with fresh fruit and soon your gardens will have fresh seasonal berries. This is a delicious easy dish to make, to be enjoyed the summer through.

Ingredients

Batter:

  • 1 ¼ cups All-Purpose Flour
  • pinch Salt
  • 3 Large Eggs, beaten
  • 1 ½ cups Milk
  • ¼ cup Brandy
  • 2 tbsp Melted Unsalted Butter

Filling:

  • 4 cups Fresh Berries
  • 2 cups Crème Fraîche (recipe on website)

Garnish:

  • ½ cup Caramel Sauce (optional—recipe on website)
  • 1 cup Sweetened Whipped Cream
  • 2 cups Berries
  • 1 tbsp Icing Sugar

Instructions

Basic Dessert Crêpe Batter:

  1. Place all ingredients in a blender, mixer or food processor and mix well.

  2. Cover batter and refrigerate for 1 hour for perfect crêpes.

  3. Using a cast iron or well-seasoned frying pan, heat and brush with melted butter.

  4. Pour two tablespoons of batter in frying pan and sauté until bubbles appear.

  5. Turn crêpe and fry for a few seconds.

  6. Remove from frying and fold into half and half again while still warm.

  7. Brush with butter and repeat as above for all crêpes.

Filling:

  1. In a mixing bowl, gently mix berries with crème fraîche. Set aside.

Garnish:

  1. Mix all together and finish.

Preparation of finished crêpes:

  1. In the centre of each crêpe, place a ¼ cup of filling mixture (spread out the width of the crêpe), roll up, place on serving plate.

  2. Top with a dollop of sweetened cream, a few berries, a drizzle of caramel sauce and a sprinkle of icing sugar.
