Ilona's Chickpea, Tuna and Onion Salad

ChefGail's friend, Ilona, gave this recipe to her and she loved it. Serve it as a side salad or a main plate with some rustic bread, butter and cheese for a perfect summer meal.

Ingredients

Dressing:

  • ¼ cup Yogurt
  • 3 tbsp Mayo
  • 1 ½ tbsp Dijon Mustard
  • 1 tbsp Grated Lemon Peel

Salad:

  • 1 can Tuna, drained and flaked
  • 2 tsp Fresh Lemon Juice
  • 1 ½ cups Chickpeas, rinsed and drained
  • ½ cups Finely Chopped Red Onion
  • 1 cup Finely Chopped Celery
  • 1 cup Finely Chopped Tomatoes
  • ½ cup Finely Chopped Italian Parsley

Instructions

  1. Whisk together the dressing ingredients and set aside.

  2. In a separate bowl, toss tuna with lemon juice.

  3. Add the other ingredients and mix in dressing.

  4. Adjust seasoning to taste.
