Apple Cheese Muffins

Just in case you have an abundance of apples from your harvest or your neighbours, here is a delicious recipe that’s simple and easy to whip up and the items freeze very well! Use for breakfast or snacks.

Ingredients

  • 2 cups All Purpose Flour
  • 1 ½ tsp Baking Powder
  • ½ tsp Baking Soda
  • 1 tsp Sea Salt
  • ½ cup Softened Unsalted Butter
  • cup Sugar
  • 2 Large Eggs
  • 1 cup Shredded Apple and/or Apple Sauce
  • ½ cup Shredded Sharp Cheese such as Cheddar, Asiago or Gouda

Instructions

  1. Preheat oven to 350 F.

  2. In a large bowl, sift flour, baking powder, baking soda and salt together in a large bowl.

  3. In a separate medium bowl, combine butter and sugar stirring until combined.

  4. Add eggs and stir to combine and finally the shredded apple.

  5. Add moist mixture to dry ingredients all at once and stir until just combined (do not over mix).

  6. Fold in shredded cheese.

  7. Spoon batter into muffin tins that are greased or lined with muffin cups, or bake in a 9” x 5” loaf pan that’s greased with oil or butter or lined with parchment.

  8. For muffins, bake for 20 to 25 minutes until springy to the touch.

  9. For loaf pan, bake for 30 to 40 minutes or until a toothpick unserted into the centre, comes out clean.

Items freeze very well.

Yields a dozen muffins or one loaf pan serving.
