Grilled Cheese and Onion Sandwiches

What is it about grilled cheese sandwiches. Is it the melted cheese on thick slices of bread, grilled with butter? How could this not be good! Here is one of my simple recipes. Alter it with your favourite cheeses, breads and garnishes.

Ingredients

  • 4 Slices Bread
  • 2 tbsp Mayonnaise
  • 4–6 oz Sliced Sylvan Star (Gouda, Cheddar or Gruyere) (available at Planet Organic)
  • 4 Thin Slices Onion
  • 2 tbsp Soft Butter (unsalted)

Instructions

  1. Spread mayonnaise evenly on four slices of bread.

  2. Split half of cheese over two slices of bread, add onion slices, cover with remaining cheese and cover with other bread slices.

  3. Place butter on outside slice of both sandwiches.

  4. Heat up a frying pan and place sandwiches on frying pan, buttered side down.

  5. Turn heat to medium low.

  6. Place a heavy plate or lid on sandwiches to compress them slightly – the heat and pressure will allow the cheese to melt evenly and keep sandwich flat.

  7. When bread is golden brown, spread remaining butter on top of sandwiches and turn them over.

  8. Cover with plate or lid and grill until golden brown and cheese is melted.

  9. Slice into quarters and serve with steaming bowls of roasted tomato soup.
